Les anchois de L’Escala<\/strong> sont un des ingr\u00e9dients \u00e9toile de la gastronomie de la Costa Brava<\/strong><\/a>, et ils ont \u00e9galement s\u00e9duit les amants de la bonne gastronomie partout dans le monde. La tradition de l’industrie des anchois dans ce village vient de loin et, en fait, l’auteur Francisco Zamora en parlait d\u00e9j\u00e0 dans son ouvrage \u00ab\u00a0Diario de los viajes hechos por Catalu\u00f1a\u00a0\u00bb (1751-1812).<\/p>\n

Cependant, pourquoi les anchois de L’Escala sont-ils tellement pris\u00e9s? La principale raison est leur ar\u00f4me et leur saveur intenses ainsi que leur go\u00fbt persistant. Ces propri\u00e9t\u00e9s sont le r\u00e9sultat d’un processus de maturation (ils sont, en effet, pr\u00e9par\u00e9s avec de la saumure ou de l’huile) qui dure 8 mois, au terme duquel les anchois sont conserv\u00e9s dans des pots de verre.<\/p>\n

Une entr\u00e9e extraordinaire<\/strong><\/p>\n

Y a-t-il une meilleure fa\u00e7on de commencer un bon repas au bord de la mer qu’avec quelques tranches de pain \u00e0 la tomate accompagn\u00e9es d’anchois dans notre restaurant, Can Miquel<\/strong><\/a>? Cette combinaison est devenue l’un des \u00e9l\u00e9ments indispensables de notre carte.<\/p>\n

Cependant, les anchois s’allient aussi volontiers \u00e0 d’autres plats traditionnels de la cuisine catalane tels que l’escalivada <\/em>(aubergines et poivrons rouges au four), la brandade de morue ou des salades comme celle au Xat\u00f3.<\/p>\n

Ne la ratez pas!<\/strong><\/p>\n

La F\u00eate de l’anchois<\/strong><\/a>, qui c\u00e9l\u00e8bre sa vingt-huiti\u00e8me \u00e9dition en octobre cette ann\u00e9e, est la meilleure manifestation de l’importance de ce produit marin dans l’histoire du village. La f\u00eate comprend \u00a0un discours prononc\u00e9 par une personnalit\u00e9 li\u00e9e au monde de l’anchois, la remise de \u00ab\u00a0l’anchois d’or\u00a0\u00bb \u00e0 une personne\/entit\u00e9 ayant particip\u00e9 activement \u00e0 la diffusion de ce produit au long de l’ann\u00e9e, un concert d’habaneras sur la plage ainsi qu’une d\u00e9gustation (comment pouvait-il en \u00eatre autrement?) d’anchois de L’Escala.<\/p>\n
