La tradition de l&rsquo;industrie des anchois dans ce village vient de loin et, en fait, l&rsquo;auteur Francisco Zamora en parlait d\u00e9j\u00e0 dans son ouvrage \u00ab\u00a0Diario de los viajes hechos por Catalu\u00f1a\u00a0\u00bb (1751-1812).<\/p>\n<p>Cependant, pourquoi les anchois de L&rsquo;Escala sont-ils tellement pris\u00e9s? La principale raison est leur ar\u00f4me et leur saveur intenses ainsi que leur go\u00fbt persistant. Ces propri\u00e9t\u00e9s sont le r\u00e9sultat d&rsquo;un processus de maturation (ils sont, en effet, pr\u00e9par\u00e9s avec de la saumure ou de l&rsquo;huile) qui dure 8 mois, au terme duquel les anchois sont conserv\u00e9s dans des pots de verre.<\/p>\n<p><strong>Une entr\u00e9e extraordinaire<\/strong><\/p>\n<p>Y a-t-il une meilleure fa\u00e7on de commencer un bon repas au bord de la mer qu&rsquo;avec quelques tranches de pain \u00e0 la tomate accompagn\u00e9es d&rsquo;anchois dans notre restaurant, <a href=\"https:\/\/canmiquelrestaurant.com\/es\/carta-cocina-mediterranea-tradicional-costa-brava\/\"><strong>Can Miquel<\/strong><\/a>?
