To be precise, it refers to the distance the foods travel from where they are produced till they reach the consumer; it is a concept used a lot in the study of the environmental impact or the ecological footprint of food.<\/p>\n<p>It is also one of the terms surrounding the so called slow food philosophy, which groups together different <strong>restaurants<\/strong> which prepare their menus with products which have travelled no more than 100kms from their place of production up to the restaurant in question.<\/p>\n<p>It is necessary to point out that in Catalonia, the concept km zero does not have an official definition, nor is it used by official organizations to define a type of product. Nevertheless, it can be said that when one talks about a kilometer zero product, it is understood that it is a product with a certain territorial proximity as regards the consumer.<\/p>\n<p><strong>What is so positive about kilometer zero products?<\/strong><\/p>\n<p>It is above all because they benefit the local economy and gastronomy.
